Eating Smart, Training Hard, and Budgeting for RunDisney

When you’re training —especially a RunDisney event—every dollar, step, and bite matters. These races aren’t cheap (hello, registration fees, park tickets, costumes, travel...), so if I can make my grocery budget stretch while still fueling my training, I’m all in.


This week, instead of running out to grab more groceries, I opened the fridge and challenged myself: What can I make with just what I have on hand?


Here’s what I found:

  • Carrots

  • Strawberries

  • Romaine lettuce

  • Eggs

  • Ham

  • Cucumber

  • Cheese

  • Ground beef

  • Ground turkey

  • Chicken breast

  • Oatmeal

  • Yogurt


Honestly, not bad! With a little planning and creativity, this turned into a solid 5-day meal plan that supports my training and keeps me in a calorie deficit—because yep, weight loss is part of my RunDisney goal too.


This plan keeps it simple, keeps costs down, and keeps me moving toward that magical finish line. Because if I can save money here, that’s more to spend on a new race costume, commemorative pin, or maybe even a celebratory Dole Whip. Priorities.
